2 TOP CHEFS JOIN FOOD FIGHT May 9, 2000 Chicago Sun-Times Jim Ritter Staff Reporter http://www.suntimes.com:80/output/news/chef09.html Celebrated Chicago chefs Charlie Trotter and Rick Bayless were cited as joining on Monday the movement against genetically engineered foods, even as a new survey found declining consumer support for biofoods. Joined by other top chefs from around the country, Trotter and Bayless were cited as calling on the Food and Drug Administration to require labels and stricter testing for genetically engineered foods. Trotter was quoted as saying, "I have concerns that this untested technology diminishes the purity and taste of food." In a letter to the FDA, the chefs were cited as writing that GE foods pose "numerous risks" to human health and the environment. Bayless said he would avoid GE foods in his two Mexican restaurants but can't because the foods aren't labeled.
